In the fermentation tanks the specific yeast strain for the style beer is added and left to convert the sugars from the brewing process into alcohol and carbon dioxide gas. Differently sized and shaped tanks are used depending on whether an ale or lager is being fermented. Fermentation temperature is key to the refined characters of our diverse line of beers. Our lager beers are fermented long at lower temperatures while our ales ferment more rapidly at higher temperatures. Additionally, our lager beers are matured at near freezing temperatures in lager tanks for 4 to 8 weeks, depending on the brand we are producing. After a beer has been properly fermented and matured, it is sent through our filtration system (except for our unfiltered beers, like Sunrise Weiss, for example) which removes all of the yeast particles from the beer to prevent spoilage.
