During malt preparation, Victory's fine German malts are first brought into the brewhouse via a conveyer system from the silo house. At that point the malt is sifted to ensure outside particles are taken out. The malt is then immediately sent to the wet mill where it's briefly steeped to be softened before heading to the mash tun. Wet-milling, permits the barley husk to be removed from the kernel with less breakage. A more intact husk means less tannic bitterness imparted in the sweet wort.
